摘要：Described is the compound 6-hydroxy-2,6-dimethylheptanal and methods forpreparing foodstuffs, flavoring compositions for foodstuffs, tobacco compositions,flavoring compositions for tobacco, perfume compositions, ingredients for perfumecompositions, perfumed articles and ingredients for perfumed articles by including said6-hydroxy-2,6- dimethylheptanal therein in order to produce:

(a) In food flavorings, sweet, green, melon-like, tropical fruit-like, seedy and raspberryaromas and/or tastes;

(b) In perfumes, sweet, green, melony, floral and muguet-like aromas; and

(c) In tobaccos, sweet, fruity-melon-like, peach-like, and floral aromas prior to and onsmoking in the main stream and in the sidestream in smoking tobaccos and the samearoma and taste nuances in the filter.

< P> Processes for synthesizing the 6-hydroxy-2,6-dimethylheptanal by hydrolysis of

2,6-dimethyl-5-heptenal are also described.
